These easy grilled lamb chops are one of my favorite healthy dinners when I need a quick, satisfying meal. Made with simple pantry spices and cooked until tender and juicy, they are packed with protein and rich flavor. I love using 100% grass-fed lamb whenever possible for a nutrient-dense meal that feels both wholesome and delicious.

Make the Kerala Garam Masala

Heat a dry skillet over low heat. Add the fennel seeds, cardamom pods, cloves and cinnamon stick. Toast the spices for 2–3 minutes, stirring frequently, until fragrant. Be careful not to burn them. Remove from the heat and allow the spices to cool completely. Transfer the toasted spices to a spice grinder and grind into a fine powder. Set aside.
Prepare the Marinade

In a large mixing bowl, combine the spices, yogurt and lime juice. Mix well until a smooth marinade forms.
Marinate the Lamb Chops

Slice the lamb rack into individual lamb chops. Add the lamb chops to the marinade and coat each piece thoroughly. Cover and refrigerate for at least 4 hours or overnight.
Grill the Lamb Chops

Heat a grill pan over medium high heat. Once hot, place the lamb chops in a single layer. Cook for 3-4 minutes per side, or until nicely charred and cooked to your desired doneness. Transfer the lamb chops to a plate and let them rest for 5 minutes.
Garnish and Serve
