Prepare the collard greens.

Wash the collard greens thoroughly, remove the tough stems, and chop the leaves into bite-sized pieces.
Sauté the aromatics.

Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion and cook for 4–5 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the ribs.

Add the leftover pork ribs to the pot and cook for 2–3 minutes to warm them and release their smoky flavor.
Add the greens.

Add the chopped collard greens in batches, stirring as they wilt down.
Pour in the bone broth.

Add the bone broth and salt. Stir everything together until the greens are submerged as much as possible.
Braise.

Bring the broth to a gentle simmer. Cover the pot, reduce the heat to low, and cook for 45–60 minutes, stirring occasionally, until the collard greens are tender and flavorful.
