These beef rolls are a homeamde take on a street food favorite, combingin tender, slow brasied beef shank with thin crispy sourdough pancakes. Inspired by a restaurant experience that left me wanting more, this recipe brings together rich, savory beef and flaky, buttery layers in every bite.

How to Make It

  1. Prepare the pancake base

    Place one pancake flat on a clean surface. Drizzle hoisin sauce evenly. 

  1. Add fillings

    Lay a few shredded lettuce leaves over the sauce to add crunch and freshness. 

  1. Roll it up

    Carefully roll the pancake tightly, keeping the filling compact.

  1. Slice and serve

    Slice in half and serve immediately while slightly warm and crisp.

Note

Tips for Success:

Don't overfill: Keep the filling balanced. Too much beef or sauce can make the roll difficult to close and messy to eat.

Serve immediately: These are best enjoyed fresh while the pancake is still slightly crisp and warm.

Can I make this ahead of time?

Beef shanks can be made a day ahead. The pancake dough can be refrigerated, but it tastes best is made on the same day.
