It all started with a box of frozen taquitos. It’s something that I picked up, not expecting much. But the kids absolutely loved them.

Watching how excited they were got me thinking. I’ve always enjoying making food from scratch. Homemade tortillas are already a favorite at home. So I thought, why not recreate this in my own kitchen? That little idea turned into these homemade chicken taquitos!

How to Make It

  1. Prep and cook chicken

    Add the homemade taco seasoning over the chicken and toss to coat evenly. Heat 1 table spoon oil in a skillet over medium heat. Cook chicken until fully cooked through.

    In a mixing bowl, combine shredded cooked chicken, shredded cheese, cream cheese, salsa and a pinch of salt. Mix until everyting is evenly combined.

  1. Assemble the taquitos

    Place a tortilla on a flat surface. Spoon the filling near the edge of the tortilla. Roll the tortilla tightly around the filling.

    Lightly spray or brush the outside of each taquito with oil. This helps them get golden and crispy.

  1. Cook the taquitos

    Heat a skillet over medium low heat. Place the taquitos seam side down in the skillet. Cook 6-7 minutes per side, or until golden brown and the cheese is melted inside.
