A Note about Yogurt Starters
If this is your first time making homemade yogurt, simply use a plain organic yogurt from the store that contains live active cultures as your starter. Once you have made your own batch, there is no need to keep buying starter yogurt. Before finishing the jar, set aside about 4 tablespoons of your homemade yogurt and use it as the starter for your next batch. You can continue doing this with each batch, making homemade yogurt even more economical and convenient.

Remove the pot from heat and let the milk cool until it i safe to touch with your fingers. You will notice a small milk layer that forms on the top. You can either remove it or keep it. It doesn't change the taste or texture.
Add the starter straight into the pot and mix well.
I prefer using whole milk because it produces a richer, creamier yogurt.
Low-fat or 2% milk can also be used, but the yogurt may be slightly thinner in texture.
For the best results, use a plain yogurt starter that contains live active cultures.
Homemade yogurt will continue to thicken as it chills in the refrigerator.Save about 4 tablespoons from each batch to use as the starter for your next batch.
